Where we're from, Capsicums for salads mean bell peppers (especially the sweet variety,) regardless of color. This Carrot and Capsicum salad with Parsley goes well with most main dishes, but we're partial to having them alongside grilled beef steak. Apple Quinoa Bake   Author: Lauren Harris-Pincus, MS, RDN Serves: 4 Ingredients 3 medium-large Gala or Fuji apples, cored and sliced with peel on (approx. 15-18 slices per apple) 1 teaspoon cinnamon ? cup raisins, packed ? cup sunflower seeds 2 Tablespoons uncooked quinoa ? cup water Instructions Spread ½ the raisins on bottom of a 9x9 brownie pan. Add apple slices and spread evenly over pan. Sprinkle cinnamon over apples. Add remainder of raisins and sunflower seeds. Sprinkle on the quinoa. Pour water into corner of pan so it coats the bottom, don’t pour over apples. Bake for 50 to 60 minutes taking care not to burn the raisins. Notes This recipe has no added sugar, and the flavor will vary depending on the sweetness of the apples. Serves: 4-6 Ingredients 2 lbs. chicken breasts (about 5-6 pieces) salt and pepper 3 Tbsp. olive oil 2-3 cloves minced garlic 1 cup low sodium-chicken broth ? cup balsamic vinegar 3 Tbsp. Truvia Brown Sugar Blend sliced tomato sliced mozzarella fresh basil Instructions In between two pieces of plastic wrap, pound chicken breasts to ?" thick. (Mine were large, so I cut them in half). Salt and pepper both sides. Heat oil in saucepan on medium-high. Brown chicken on both sides. Reduce heat to medium-low and add garlic. Cook until garlic is tender, being careful not to burn it. Daal (Red lentil) Pan Cake   Author: Sultana Parvin Serves: 4 Ingredients 1 cup red lentil 1 cup rice powder 1 tbs onion paste 1 tsp turmeric powder 1 tsp chili powder 1 tsp salt 1 tbs olive oil Instructions Add 2 cups of water with the red lentil and let it soak into the water for 2-3 hour. Grind the soaked red lentil by a blender and then mix with rice powder. Prepare batter adding water with the mixture. Add onion paste, turmeric powder, chili powder and salt with the mixture and stir well. Grease the cooking pan with a little bit of oil and place the pan on the burner. Put 2 tbs batter on the oil greased pan with medium heat and make it a cake. When the cake dries up and small holes are created on it, remove it with a non-metallic spatula. Ingredients 2 cups almond flour 2 tablespoons coconut flour 4 medium eggs 3/4 cup applesauce, unsweetened 1/2 cup water 1 tablespoon coconut oil, divided and melted 4 banana, cut into small pieces 1 teaspoon cinnamon, ground cooking spray Method Lightly grease waffle maker with cooking spray. Preheat to medium-high. In a medium bowl, combine almond flour, coconut flour, eggs, applesauce, water, 1 tablespoon coconut oil, and cinnamon. Mix well with a wooden spoon. First of all marinate the chicken in garlic, lemon juice and salt for at least 30 minutes. ? Take a pot and put it on medium flame. Add palm oil, add chicken. ?
